Garlic: Garlic is widely used around the world for its pungent flavour as a seasoning or condiment. It is a fundamental component in many or most dishes of various regions, including eastern Asia, south Asia, Southeast Asia, the Middle East, northern Africa, southern Europe, and parts of south and Central America. The flavour varies in intensity and aroma with the different cooking methods. Garlic has been used as both food and medicine in many cultures for thousands of years, dating at least as far back as the time that the Giza pyramids were built.

Garlic is mentioned in the Bible. Hippocrates, Galen and Pliny all mention the use of garlic for many conditions, including parasites, respiratory problems, poor digestion, and low energy. Its use in China was first mentioned in AD 510. Scientific studies reveal garlic has been found to have antibacterial, antiviral, and anti fungal activity. In 2007, the BBC reported that Allium sativum may have other beneficial properties, such as preventing and fighting the common cold. Named for the city of Cayenne in French Guiana, it is a cultivar of Capsicum annum related to bell peppers, jalapeños, and others. The Capsicum genus is in the nightshade family (Solanaceae). Cayenne is used in cooking spicy dishes, as powder or in its whole form (such as in Sichuan cuisine) or in a thin, vinegar-based sauce. It is generally rated at 30,000 to 50,000 Scoville Units. Onion and other Allium vegetables are characterised by their rich content of thiosulfinates, sulfides, sulfoxides, and other odoriferous sulfur compounds. The cysteine sulfoxides are primarily responsible for the onion flavour and produce the eye-irritating compounds that induce lacrimation.

The thiosulfinates exhibit antimicrobial properties. Onion is effective against many bacteria including Bacillus subtilis, Salmonella, and E. coli.
